Ginza: Authentic Nagahama ramen at Yamachan (博多長浜屋台やまちゃん)

There are several Hakata tonkotsu ramen spots in Ginza, but one of the most convenient options is Hakata Nagahama Yatai Yamachan (博多長浜屋台やまちゃん), located in Higashi-Ginza. This is their Ginza branch, while the main store is based in Nagahama, Fukuoka. With noodles and green onions delivered fresh daily from Fukuoka, you can enjoy authentic Nagahama ramen here

From the outside, the shop gives off the vibe of a street-side food stall, but inside, it’s bright and quite spacious. There’s a touch-panel ticket machine on the left as you enter. If you visit during lunch hours (until 3 PM), you can choose either a free rice portion or an extra serving of noodles.

Many ramen shops only offer bottled beer, but here you can enjoy draft beer. The glasses are properly chilled, making it even more enjoyable. Since the ramen pairs exceptionally well with beer, it’s a perfect combo.

Draft beer (生ビール) 500 yen

The basic Nagahama ramen is ¥700, but I opted for the Wonton Noodles, which comes with wontons and two slices of roast pork, along with green onions. The creamy, milky-white broth is completely odorless. While I usually find some tonkotsu ramen too heavy, this one is light, easy to eat, and absolutely delicious.

Wonton noodles (ワンタンメン) 950 yen

You can choose from five levels of noodle firmness: Barikata (extra firm), Hard, Normal, Soft, and Zundare (very soft). They also offer Konaotoshi (ultra-firm) options. I usually go for “normal” firmness when eating Hakata ramen, which is slightly firmer than most places—but here, “normal” is just right. The thin noodles, a hallmark of Nagahama ramen, have a great texture and flavor.

The wontons are smooth and delicious. You can also add more wontons when ordering extra noodles.

The broth is flavorful and satisfying on its own, but don’t miss the condiments on the table, including red ginger and spicy mustard greens (Karashi-takana). Adding these enhances the ramen even further.

Here’s my bowl after adding condiments (for the photo—I added even more afterward!). The tanginess of the pickled ginger and the heat from the mustard greens made the ramen even more appetizing. The spicy wontons reminded me of Taiwanese red oil wontons.

This light and refreshing tonkotsu ramen is perfect as a dinner option or even as a post-drink meal. It really feels like authentic Nagahama ramen you’d enjoy at a food stall.
