Taipei: Ay-Chung Flour Rice Noodle (阿宗麵線) in Zhongxiao

After returning to Zhongxiao Fuxing Station by bus from Jiufen, I was wandering around the station area when I stumbled upon a familiar sign. It was Ah Chung Mee Sua (阿宗麵線)

The branches in Ximending and Shilin Night Market are more famous, but Zhongxiao Fuxing also has one. Even though I wasn’t hungry, the shop wasn’t too crowded, so I couldn’t resist going in.

The menu is simple—Taiwanese vermicelli (narrow noodle) is the only dish they serve. The item “Ah Chung Spicy Sauce (阿宗辣椒醤)” is a take-home condiment and seems to be a popular souvenir.

Orders are placed at the kitchen near the entrance. Both dine-in and takeaway customers queue up here.

For take away, say “外帯 (Wai Dai),” and for dine-in, say “内用 (Nei Yong).” For size, small is “小碗 (Xiao Wan),” and large is “大碗 (Da Wan).” Alternatively, “Small” and “Large” work just fine.

If the staff asks “Coriander?” reply “要 (Yao)” if you want it or “不要 (Bu Yao)” if you don’t. A simple nod or shake of the head works too. Of course, “Yes” or “No” will do the job as well.

Pay at the counter, add condiments to your liking, and find a seat. The condiments available are **Chili (辣椒), Garlic (蒜醬), and Vinegar (烏醋).

I ordered a small bowl of Taiwanese vermicelli, topped with chili and vinegar. The small portion is light enough to enjoy even when you’re not too hungry.

I also opted for coriander. The thick soup at Ah Chung Flour Rice Noodle is loaded with bonito flakes, giving it a rich, dashi-like flavor. On its own, it tastes quite Japanese, but the addition of cilantro adds a distinctly Taiwanese twist. The noodles are extremely thin, resembling Japanese somen.

To make it easier to scoop with a spoon, the noodles are pre-cut into shorter lengths. This made it convenient and enjoyable to eat. While the flavor was perfect, I was a bit disappointed that there wasn’t much intestine in the bowl.
