When it comes to dandan noodles, I’m already satisfied with Ah-Un and Deno, but recently, I found another favorite spot. That place is Kakimaze Noodle Chidori (カキマゼヌードル Chidori) in Hirai.
As you enter the restaurant, you’ll find a ticket vending machine right at the entrance. There are four types of noodles available: abura soba, shrimp salt-flavored abura soba, Taiwan mazesoba, and dandan noodles. There are also limited-time menu items. While I always tend to go for dandan noodles, the abura soba looks delicious too…
Of course, the dish I’m introducing today is the dandan noodles. But first, let’s start with a beer. They offer small bottles (450 yen), which I really appreciate. They also have medium bottles (600 yen). The small bottle was Heartland, while the medium bottle seemed to be Ichiban Shibori. Plus, the beer comes with a small side dish—this time, it was seasoned bamboo shoots, lightly salted and refreshing.
And here it is—the dandan noodles It comes topped with mizuna instead of coriander, which reminds me of Ah-Un’s style. First, mix everything well so the noodles absorb the sauce.
The large bowl makes mixing easy. It contains minced meat, nuts, mizuna, and Sichuan pepper. The spice level is mild. The thick, chewy noodles are well coated with the rich sesame-based sauce, making it absolutely delicious.
On the table, you’ll find a Sichuan pepper mill, vinegar, and Tabasco. Since I wanted a bit more of a numbing sensation, I added extra Sichuan pepper.
Thankfully, they offer free rice as an add-on! Once I finished the noodles, I had them add rice to the remaining sauce. Surprisingly, it was a generous portion.
I had intentionally saved extra sauce, so I was able to coat the rice evenly. Even though I was already full, I couldn’t resist finishing it all—it was just that good!
