I spent every night exploring Ningxia Night Market (寧夏夜市) during my stay in Taipei since it was very close to my hotel.

Lai Ji Oyster Omelet (賴記雞蛋蚵仔煎) was also near my hotel, so I decided to try their famous oyster omelet. I was impressed by the flavors! This place is extremely popular, and there was always a long line.

A large number of eggs were neatly arranged in front of the shop.

There’s also a popular rice ball shop called 阿婆飯團 right in front of Lai Ji. I’d love to try it next time!

Lai Ji is divided into two sections: the kitchen on the right and the dining area on the left.

Both takeaway and dine-in customers need to line up on the right side.
First, I told them I was dining in and placed my order. If you only order an oyster omelet, they cook it right after you pay. The staff then place the food on a table in the dining area on the left. Sometimes, they ask you to “be seated and wait for a while.”

Here’s the oyster omelet! It’s generously topped with chili sauce. The dough contains sweet potato starch, giving it a chewy, springy texture.

The oysters were small but plentiful, and they had a great flavor. The dough had two textures—crispy and chewy. The sauce was on the sweeter side, so I added some spicy miso for extra flavor.
Even though the shop is small and always crowded, the staff efficiently guide customers to available seats. Since most people eat quickly and leave, you don’t have to wait too long to enjoy their oyster omelet.
